Fried lumps are rightfully the most popular and delicious among mushroom dishes.

How and how much to cook mushrooms before frying

The stubs can be boiled, dried, fried, pickled, frozen for the winter, salted, they still do not lose their useful properties. It is necessary to process mushrooms within a few hours after harvesting, since the pulp quickly deteriorates and darkens.

First, part of the leg is cut off, debris is removed from the sticky cap, then thoroughly washed under cold running water. You do not need to soak, you just need to fill them with water and wait for them to boil. Then drain the water, collect a new one and boil the mushrooms again. Thus, all bacteria, toxic substances, insects, worms invisible to the eye will die. It takes a whole hour to cook the stumps, removing the foam. As soon as the mushroom mass settles to the bottom of the pan, we can assume that the fruit bodies are cooked.

After such processing, they prepare an independent dish from the mushrooms or serve as a side dish for meat or stuff pies with them.

How much to fry the meat

Before subjecting the mushrooms to heat treatment, they must be peeled and washed. If there is no need to boil them, then peeled and cut into pieces, you just need to pour boiling water over them, spread them on a paper towel and let them dry.

Heat the pan, put the fruits in it and, without pouring vegetable oil, dry again. Thus, all the liquid comes out. This procedure will take about 10 minutes. As soon as the mushrooms decrease in size, you can add any vegetable or butter and fry thoroughly for 15 minutes, stirring constantly.

How to fry mushrooms

Fried lumps in two ways:

  • without pre-cooking;
  • with pre-cooking.

Specimens collected in an ecologically clean place can not be boiled for a long time after boiling. It is enough just to clean them of debris and pour over them with boiling water. Soaking mushrooms is also not recommended, since they have a porous consistency, which tends to absorb a lot of moisture. As a result, the finished dish will turn out to be watery and tasteless.

Meanwhile, many people prefer to boil mushrooms beforehand. This takes about 40 minutes. After pretreatment, the stump is poured with cold water, put on high heat and brought to a boil. Then the flame is reduced, and the mushrooms are boiled for a long time, removing the foam in the process. Or the first water after boiling is drained, the mushrooms are poured with fresh water and boiled for about 30 minutes.

Advice! If you are preparing for frying, it is better to remove the top layer of the skin on the cap, as it can be bitter.

After these procedures, you can start frying.
